Thorough Fare partners Heugel and Yu have an extensive consulting background that includes modest cocktail menu development to full scale overhauls of operations at restaurants and bars in multiple states. Outside of advising independent restaurants and bars, Yu is the consulting chef for the George Bush Intercontinental Airport Centurion Lounge, and Heugel has provided planning and operational services for some of Houston largest music festivals regarding food and beverage service. Additionally, the duo’s real estate companies also own commercial property with multiple hospitality tenants and frequently provide consultation to commercial real estate developers. Heugel is regularly contracted to advise various spirit brands, from smaller boutique spirit companies to global conglomerates. Heugel’s writing on spirits and cocktails has been published by various media outlets and major print periodicals.
